This one a long process! Start with the tamale flour and mix well.
Then wash the corn husks. Prepare your meat - tinga pollo - or your choice.
Wrap the meat in the corn flour batter.
Place in a steaming cooker - takes about an hour.
Ready to serve - with cabbage salsa!

Cabbage Salsa (for Tamales)
Chop some cabbage and spin dry, tomatoes and jalapenos. Mix and add salt and lemon juice. Must have for tamales (coming soon!)

Pakori
Start with some besan - flour of garbanzo beans. Add some salt, spices, chili powder, ajvien. Add some water and mix into a paste to create the batter.
Chop some potatoes and spinach. Add to the batter and mix well. Usually you would really deep-fry this but you can use a pan and slightly less oil too. Drop in the mix in small chunks and let them cook. Ready to server with your favorite chutneys and sauces!

Hashbrowns - breakfast
Coming to an end for a nice breakfast. Prepare some hashbrowns (frozen) - more on fresh ones later!
Throw on a pan with some oil and add salt to taste.
Serve orange juice, omlette, hashbrowns and fruta!

Omlette
Continuing with the breakfast series, let us make an omlette. Break 3-4 eggs, remove the yolk. Beat the egg and it ready to add some finely chopped onions and chili. Grease your pan with some olive oil and pour the egg. Let it brown on both sides.
