Quiche - Veggie

Ingredients
  • Egg whites
  • Milk
  • Cheese
  • Broccoli
  • Chilli
  • Mushroom
  • Onion
  • Flour
  • Salt and pepper
Preparation




Chop vegetables: onion, chile, mushrooms and broccoli.



Mix two cups of milk with 4 eggs and 1 cup of flour.. 






Chop veggies.


Saute veggies in a skillet with a bit of olive oil.


Spread cheese in the bottom of a glass container.







Add sauteed veggies on top of the cheese.




Add milk, egg and flour mixture. Add salt and pepper to taste.



Preheat oven to 400 degrees.


Bake until eggs are set.

Quinoa with Tofu Salad

Ingredients
  • Quinoa
  • Lentils
  • Lime
  • Tofu
  • Onion
  • Chillies
  • White vinegar
  • Cilantro
  • Salt
Preparation

Rinse quinoa and boil it.  




Rinse and boil lentils separately from quinoa until tender, but not mushed. We used the microwave. You can use a pressure cooker for the lentils.





Chop onion, cilantro and tofu into small pieces.






Add boiled quinoa and lentils after they are cooled to the chopped onion and cilantro. Add lime, salt and white vinegar.


Enjoy!

Poha


Ingredients

  • poha
  • tomatoes
  • chili
  • red onions
  • cilantro
  • cashews
  • mustard seeds 
  • turmeric powder
  • salt
Preparation

Purchase poha (flat rice puffs) at an Indian store. The "thick" kind is better.



Rinse poha in a colander.





Chop tomatoes, onions, chilis and cilandro.


Fry mustard seeds on some olive oil.




Add red onion to the mustard seeds.


Chop cashews and leave on the side.


Add tomatoes and chilis.


Add the poha to the mix.



Add turmeric powder and salt.


Garnish with cilantro.


And, crushed cashews.


Serve and enjoy. You can add cilantro chutney as a side sauce.
