Empanadas


Ingredients

Preparation

Mix corn masa. Make corn tortillas in the tortiadora. 



Add chicken tinga or other stuffing (like potato stuffing).


Fold and seal.

Cook in a flat pan. Add a small amount of olive oil.





Top with Salvadorean sour cream.



Add lettuce.

Salsa verde.

And, pico de gallo... Enjoy!

Chicken with Asian Citrus sauce

Ingredients:

  • Trader Joes Gyoza sauce
  • Pepper
  • Orange juice (fresh or carton)
  • Fresh lime juice 
  • Rice vinegar
  • Sesame seeds
  • Chicken breasts 
  • Vegetable stir fry
  • Steamed Rice
Preparation:

Mix Trader Joe's Gyoza sauce, rice vinegar, fresh lime juice and orange juice.





 

Rinse and cut chicken breasts into small pieces.


Boil for 5 minutes (until soft, but not fully cooked).



Brown in a pan using olive oil.


Add Citrus sauce.

Let it simmer for a few minutes until chicken is fully cooked.



Garnish with sesame seeds.


Enjoy with vegetable stir fry and steamed rice, or vegetable barley.

Sopes - Tinga Pollo

Ingredients:

  • Tinga de Pollo
  • Masa MaSeCa (found at any Mexican store)
  • Lettuce
  • Salsa verde and/or roja
  • Pico de gallo
  • Sour cream
  • Queso Fresco
  • Refried beans 

Preparation:
Make the tinga chicken first (refer to previous post for detailed information).










Prepare the masa (corn flour) by mixing Maseca and cold water.
The amount of water is based on how much Maseca you use. The dough should be soft and malleable.




You can make the sopes by hand  by making a ball of dough and patting it between your hands until flat.
Once the sope is formed, place in a hot flat pan. You may cook it with or without oil.



Add the tinga to the sopes.


Along with other ingredients.You can mix and match-the salsas, pico de gallo, queso, sour cream, lettuce, etc.

Chicken Tikka Masala

Start with about 1lb chicken. We like the clean breast and you can pick your choice cut. Boil the chicken in water until its cooked.





Now brown the chicken in a pan with some butter - for best taste! Then cut into smaller pieces so the masala can seep in.









Mix the masala in plain yogurt and let it sit for few minutes. Then cook to a boil, add the chicken and let it simmer for 5mins. Serve with roti!
