Quiche - Veggie

Ingredients
  • Egg whites
  • Milk
  • Cheese
  • Broccoli
  • Chilli
  • Mushroom
  • Onion
  • Flour
  • Salt and pepper
Preparation




Chop vegetables: onion, chile, mushrooms and broccoli.



Mix two cups of milk with 4 eggs and 1 cup of flour.. 






Chop veggies.


Saute veggies in a skillet with a bit of olive oil.


Spread cheese in the bottom of a glass container.







Add sauteed veggies on top of the cheese.




Add milk, egg and flour mixture. Add salt and pepper to taste.



Preheat oven to 400 degrees.


Bake until eggs are set.

Quiche - Spinach

Ingredients
  • Frozen chopped spinach
  • Feta cheese
  • Onion
  • Mushrooms
  • Eggs
  • Pepper
Preparation
 

Pre-heat oven at 400F.




Chop onions and mushrooms.



Crack eggs and blend them.


Microwave frozen spinach.


Saute onions and mushrooms.



Add spinach.


Add onions, spinach and mushrooms to a pie non-stick pan.



Add blended eggs and add pepper to taste.


Add feta cheese.





You can also add thinly sliced potatoes for crust or add flour crust.

Pesto

Ingredients:
  • Fresh basil
  • Cheese (feta or Parmesan)
  • Olive oil
  • Almonds (or walnuts)
  • Garlic (powder)
  • Salt
  • Pepper
Preparation:

Blend all ingredients together until a paste is formed. Add olive oil according to the smoothness you prefer. You can add to home made pizza or pasta, or simply eat with toasted bread.
